This dish is fabulous with any meal but is also great with a Christmas dinner, it can be prepared in advance and put in the fridge beforehand, leaving more time for opening Christmas presents!!
2 red onion, peeled and quartered
1 butternut squash, peeled, deseeded and chopped into 2cm pieces
2 parnsips, peeled and chopped into 2cm pieces
4/6 carrots, peeled and chopped into 2cm pieces
3 beetroot peeled and chopped into 2cm pieces
Mixed herbs or fresh herbs such as parsley and thyme
Salt and pepper to taste
Preheat oven to 200. Place all the vegetables into a roasting dish and cover in a good gulg of olive oil, sprinkle over mixed herbs and a little salt and pepper to taste. Mix well to ensure that all veg have a coating of oil. Cover in foil and place in the middle of the oven for 40mins, then remove foil and cook for a further 40mins until golden brown.
This recipe serves 6 but you can adjust quantities according to how many people you have around the table. You can add or remove seasonal veg according to your taste – you may want to add white potatoes, sweet potatoes or swede for example. You can adjust the cooking time according to how large/small you cut your veg and what veg you use.
